Bruschetta is the perfect appetizer. Originally an Italian recipe, it is guaranteed to be tasty and full of flavour. 




Preparation Time

30 minutes


For the toast:

  • 10 slices of Baker’s Inn bread
  • Olive oil (for brushing)
  • 2 cloves garlic, halved

For the tomatoes:

  • 4 large tomatoes, sliced
  • 1 red onion, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 2 Tbsp balsamic oil 
  • 4 Tbsp Olive oil
  • 1/4 Cup thinly sliced basil
  • 1 tsp salt


  1. Make marinated tomatoes: Preheat oven to 200°. In a medium frying pan over medium-low heat, heat oil. Add garlic and cook until lightly golden, 2 to 4 minutes, then remove from heat and let cool.
  2. In a large bowl, toss together tomatoes, onion, basil, vinegar, salt.. Add garlic and oil and toss to combine. Let marinate for 30 minutes.
  3. Meanwhile, cut the crusts off the bread and lightly toast bread: Brush bread on both sides lightly with oil and place on large baking sheet. Toast bread until golden, turning halfway through (about 3-5 minutes). Let bread cool for 5 minutes, then rub tops of bread with halved garlic cloves.
  4. Spoon tomato mixture on top of toast just before serving.
  5. Garnish with fresh parsley & decorate serving platter with wasabi mayonnaise and balsamic reduction
