Avocado Sandwich

Avocado Sandwich

The avocado is one of the most nutrient-dense foods available. It is one of the richest in fiber, folate, potassium, vitamin E, and magnesium among all fruits. This nutrition profile makes it a worthy superfood and here is a delicious way to make an avocado sandwich.

Preparation Time

10 minutes

4 slices of Baker’s Inn bread

Margarine or butter

Half a large avocado, peeled & de-seeded

Half a fresh lemon

1 small tomato, chopped
1/4 small onion, finely chopped (optional)

Lettuce leaves, washed and dried

Salt & pepper to taste

  1. Lightly spread margarine or butter onto the 4 slices of bread & put to the side
  2. Place the avocado in a small bowl, squeeze the lemon over it, and lightly mash it with a fork.
  3. Add chopped tomato & onion if using and mix gently. If not using, move to the next step
  4. Divide the lettuce in half, and place on the bottom of 2 of the slices of bread.
  5. Divide the avocado mixture in half and spread evenly on 2 pieces of the bread, on top of the lettuce
  6. Add salt & pepper to taste
  7. Garnish with left over lettuce

Using a large cookie cutter or a large glass, make sandwich rounds once the bread has been buttered. Proceed to step 2, creating round sandwiches, with the avocado in the middle and on the top of the sandwich.
