Haifiridzi Sandwich

This is possibly one of the common sandwiches in Zimbabwe that invoke childhood memories! A childhood favourite, a um’bhida / muriwo (leafy greens) sandwich is a tradition for some families! Today we’ve simply added some mince and a bit more flavour to the veggies. Delicious and creative!

Ingredients

  • 2 – 4 slices Baker’s Inn White Bread 
  • Butter/ Margarine to spread
  • ½ bunch leafy greens of your preference, chopped
  • 200 g steak mince
  • ½ tsp salt
  • 1 small onion, chopped
  • 1 large tomato, grated
  • ½ tsp Italian seasoning
  • ¼ tsp curry powder
  • 2 tsp tomato paste
  • 3 tbsp oil

Method


1.    Get your ingredients together. Heat oil in pan. Add the mince, salt and Italian seasoning. Fry until beginning to brown.
2.    Add tomatoes, curry powder and tomato paste. Fry for about 3 minutes. Add the chopped leafy greens and cook for 3-4 minutes. Taste for seasoning and adjust accordingly. Set aside briefly.
3.    Spread some margarine or butter onto the bread slices on one side. Heat a non-stick pan on the stove. Add the bread slices, margarine side facing down. Allow the bread to toast until golden brown. Remove from heat and begin to assemble your sandwich.
4.    Place the mince and veggie mix filling onto the bread on the side which was not toasted. Close your sandwich with the toasted side facing up. Enjoy!
