Pan-toasted Mushroom Sandwich

This sandwich is filled with nothing but deliciousness! Made using the Baker’s Inn Low GI Seed Loaf, it’s a great snack for those trying to eat healthy.

Ingredients

  • 4 slices Baker's Inn Low GI Seed Loaf
  • 250 g button mushrooms, sliced
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp tomato paste
  • 3 lettuce leaves, chopped
  • 1/4 small red onion, sliced
  • 1 medium tomato, sliced
  • 2 tsp mayonnaise
  • 1 tbsp oil

Method

  1. Get your ingredients together. Heat oil in pan. Add the mushroom, season it with salt and pepper. Fry until it begins to turn golden brown, stirring occasionally.
  2. Add the tomato paste to the mushroom. Still for a further 5 min, on low heat. Set aside.
  3. Take the bread slices and spread the one side with margarine or butter. Put griddle or regular non-stick pan on the stove top on medium heat.
  4. Toast the bread until golden brown on both sides.
  5. Spread some mayonnaise on the bread slices. Add the mushroom, followed by the red onion, tomatoes and lettuce. Seal the sandwich and repeat process with the other. Enjoy!
