Open-Faced BBQ Chicken Sandwich

Open-faced sandwiches are fantastic. You can put just about any filling into them and they can be easily transformed into a light meal. If you’re not a fan of chicken, you can substitute it with beef or pork.

Ingredients

  • 4-5 slices Baker's Inn Whole Grain Loaf
  • Margarine/Butter
  • 250 g chicken breast, cubed
  • 150 g mozzarella cheese, grated
  • 4 tbsp. barbeque sauce
  • 1/4 tsp salt
  • 1 tbsp. cooking oil
  • 8-10 cherry tomatoes, halved

Method

  1. Get your ingredients together.
  2. Heat oil in pan and add the cubed chicken breast. Season with salt and fry for about 10 min or until cooked and tender.
  3. Pour the barbeque sauce over the chicken. Stir until each cube is coated in the sauce and cook for a further 2 min on low heat.
  4. Remove from heat and allow to cool.
  5. Spread some butter/margarine on the bread slices. Put in the oven at 180 degrees Celsius and toast for 2 – 3 min or just until it begins to get crunchy.
  6. Remove from oven and spoon the now cooled barbeque chicken onto each slice.
  7. Add 2 cherry tomato halves onto each slice. Sprinkle the cheese again onto each slice.
  8. Return to oven and grill just until the cheese melts. Garnish with some shredded lettuce leaves. Enjoy!
